Have you read this book.  It is far more entertaining than I thought it would be.  Informative.  Makes you crave steak!  A quest for both flavor and tenderness.  

it is a fun read........I recommend.     It’s been out for more than a decade.

I love this book. I especially enjoyed his accounts of aging beef that has already been processed.
