Hello
We pick up half our beef in two days with the other half coming Thursday week (back half hanging for 4 weeks)
Instructions to butcher was no mince nor sausages (cant stand the c##p that is mixed into them) instead keep off-cuts to minimum as there is already going to be kilos and kilos of such and there is only so much stroganoff and skewers one can eat
We have slabs of beef ribs, (Dexter not veal) osso bucco, corned beef, steaks, roasts, cheeks and tail
The Bloke couldnt help himself buying a Mincer / Sausage maker
Seeking great recipes best suited for Dexter beef cuts of ribs, sausages, great marinates. And if anyone has done great justice for Dexter Osso Bucco - would love to hear from you too.
While I can pack, marinate, make etc - the eating aspect is still a work in progress. ...................

My favorite is a steak prepared by Gordon Ramsay's method:
I love any roast prepared in a pressure cooker with vegetables. Brown the meat then support it off the bottom, cover with vegetables, cook at 10 PSI for one hour.
I love a good set of short ribs, browned, placed on a bed of cabbage, covered with cubed potatoes, carrot sticks, celery sticks, a whole onion, garlic cloves and either beef or wine for liquid. One hour at 10 PSI.
My bride makes gravy from the stock that remains. Grandpa can eat this meat with his teeth out. Everybody can enjoy the taste.
Use a recipe for swiss steak on a piece of cubed steak, except add a handful of little browned mushrooms.
Needless to say, always use Dexter beef, for the finest flavor.

I am still searching for a really great smokey thick sauce to spread over the beef ribs Maybe a couple of different flavours such as smoled, BBQie, tomoato-type sauce.
Couldnt believe how many ribs came of two little Dexters.

Barbeque sauce is a religion around here. Everybody has their own secret sauce.
My next door neighbor makes a vinegar-based sauce that he calls "Drain Cleaner". It is sharp!
Be careful when cooking with tomato based sauces. They burn easily. It takes a good cook to barbeque ribs with a tomato based sauce.
Try looking on the Traeger Grills site for barbeque recipes. I'm on their email list and I get a new recipe about every other day.
