Hi Karen. Thanks for the article. I've been reading the Outlander books and though the location of the story is primarily Scotland, the description of food and feasts is pretty much the same as England during the time period, where I don't off the cuff remember a single time a meal was planned around beef. Usually if there was meat it was wild game. Rabbits or deer and of course fish. Lots of ale too. Domestic animals seemed to be more often pigs or lambs. While I was gathering some data from historical resources online, I found the neatest cookbook. ( If you look at the book with the babel.hathitrust.org/cgi/pt?id=uc1.$b103092;view=1up;seq=43 You might have to type that into the search engine. AND. . .. . . . this site has the digital library you "used" to be able to search on Google.
