Judy, in almost 35 years, I never steered a Dexter bull calf. That's hundreds of animals. I was told the meat would be horrible, not true. Old wives tale. I usually slaughtered at around 18 to 23 months. Tender and tasty. Pass it on.

I do both butcher around 28 months. I am not sure I can tell a difference in the meat between the 2. I usually steer for management purposes. I have thought about not doing it at all. Not sure if steering is worth it. summer is not really an issue I have 2 grazing properties. so bull and steers go to one and cows and breeding bull go to another. The bulls do get a little rough on the temp dividing wire pushing and playing someone is always going through it. Not sure if making them steers would help that or not generally the steers I have are right in the middle of it to.
