We're a little over a year since the last steer we put in the freezer, so the effort is on to try to whittle down the beef still there. This boy was entirely grass fed, and finished entirely on grass and the apples that had fallen from the orchard he was pastured in. It was pretty good!

How did you cook it?
This time of year I like to do it like Gordon Ramsay tells, pan frying it.

Gene, I have a little portable grill that has solid pans and two burners. I set one side to full hot, and the other side to a low heat. I'll put the steak on the hot side for a minute or two, then flip it and do the other side. Then I move it over to the low flame side, and cook it throughout a bit flipping it once. I'm pretty happy with how they turned out. I'd like a bit more tenderness, but the taste is really good on these. Not many steaks or hamburger left, I have a fair number of roasts left. My father in law LOVES the soup bones, so he's always happy when I bring one over to him this time of year. Sheril's father and I are in somewhat related businesses, but we don't really compete but enjoy talking shop. Sheril always jokes that the only other boy she dated that her father liked was the son of a butcher. Apparently with over 100 cows at this time I'm the perfect son in law
